Sauvignon Blanc
Orange Muscat
Traditional production method to halt fermentation and preserve 3% residual sugar. To maintain a touch of sweetness, the fermentation process is halted by cooling down the tank when the wine is nearly dry, retaining its natural sugars. Made entirely in stainless steel, this wine is crafted from 100% Orange Muscat grapes.
Doo-Zwa-Zo
Our Doo-Zwa-Zo is crafted from the finest two French grape varieties we sourced from the 2023 vintage. Fermented dry, it is made in a crisp, clean style with bright acidity and pleasant fruity notes. The name is a play on the phonetic pronunciation of the French “Deux Oiseaux,” meaning “Two Birds,” referring to the two traditionally French varieties that compose this wine blend. Reserve Petit Verdot
Our winemaking team was thrilled to bring a 100 percent Petit Verdot from Oswald vineyards. Petit Verdot is one of the five main varietals in Bordeaux, and is typically only blended up to 5 percent in blends in France for color and tannin. Texas can produce an elegant yet age worthy example of the varietal. A wine for fine dining, aging in your cellar or enjoying with friends and family.
Cabernet Franc
Cabernet Franc holds a special place as one of our winemakers' favorites. The creation of this wine in Texas poses distinctive challenges that our winemaking team ardently embraces. Our winemaker envisioned a Loire-style Cabernet Franc, ensuring a refined blend of structure, spice, and fruity nuances. Enjoy this highly awarded wine, which pairs exquisitely with meals and good company.
The Temp
THE TEMP has become a legendary favorite at Hilmy Cellars. Crafted with a Tempranillo base, each year we add new varieties to keep the blend exciting. This smooth sipper is perfect for any gathering - cheers to that!
Sangiovese
Sangiovese finds its roots in the esteemed Italian wine region of Tuscany. The name "Sangiovese" is derived from the Latin phrase "sanguis Jovis," translating to "blood of Jupiter." Our Sangiovese is from Lahey Vineyards situated in the Texas High Plains. Anticipate a flavorful, light to medium bodied wine that harmonizes well with a variety of culinary pairings. Tannat
Tannat has been steadily gaining popularity among both Texas wine enthusiasts and vineyard growers. Known for its deep ruby color and robust tannins, it appeals to lovers of bold red wines. Our Tannat highlights the grape’s natural intensity while also showcasing the finesse and balance it is capable of delivering. Reserve Tempranillo
Our reserve Tempranillo is meticulously chosen from the finest lot of Tempranillo grapes every harvest season. Our objective was to craft a velvety, refined wine with the perfect balance of aging potential and immediate drinkability. Tejas Blanc
A Classic Rhone white blend that we believe thrives in Texas. Each grape variety contributes uniquely to this blend. Roussanne builds the backbone of the wine while the Marsanne brings bright acidity for balance. Mourvèdre
Our Mourvèdre is sourced from Blackwater Draw vineyards outside of Brownfield Texas. This Mourvedre is usually blended into our Politics and Religion blend, but we decided to leave a small portion out so that we could show off what this single varietal could show on its own.
Reserve Montepulciano
Montepulciano originates from Abruzzo in east central Italy. It has been grown in Texas with great success much like our Veesart Vineyards Montepulciano from the 2021 vintage. Montepulciano is known to have a great cellar ageability, yet also can be very pleasant in its youth. Our "Politics and Religion" blend is a classic concoction that dares to mix two varieties that are not usually blended in France. Just like how we steer clear of stirring up politics and religion! Merlot
Our winemaker possesses a deep passion for Merlot, a grape variety that compliments Bordeaux grapes in Texas. By combining grapes from two vineyards in the High Plains, both owned by childhood friends, we aim to capture the essence of their enduring friendship through our wine blend. Penumbra
The Penumbra is our exclusive Eclipse wine release. The wine is sourced from the 100% Syrah grapes that were hand harvested from Veesart Vineyards. The grapes were gently destemmed then fermented in individual 1-ton bins. The must was punched down 3 times a day and gently pressed to not bring in any over extracted tannins. Aged 17 months in thirty percent new French oak barrels.
Albariño
Harvested later in the season, we wanted this grape to reach full maturity. Partial malolactic fermentation was used to increase the structure that Albarino naturally possesses. Fermentation at 60 degrees for a week helped this wine slowly develop aromatic components that make this wine very special.
Tempranillo
Tempranillo has become a name stay in the state of Texas for making premium wines, and ours is no exception. Our 2021 Tempranillo is a blend of hand-picked fruit from two of our premium growers in the Texas High Plains. Robin Rhone
The Robin is our label for our bold blend. This time we decided to do a Rhone style blend with a Texas twist. Typical Rhone blends are GSM, we added Carignan for some fruity boost. This wine has been pre cellar aged and is ready to drink! Rhone blends tend to pack a punch, and this one is no different, yet due to age it has developed a softer side.
Pàssaro
The Pàssaro is Hilmy Cellar’s first iteration of a Port. Legally, only port from Portugal can be named port; similar to Champagne vs sparkling wine. This dessert wine is made in the traditional manner, fortifying towards the end of fermentation to retain the natural grape sugars for sweetness. Made with Tinta Cao grapes, this dessert wine is the perfect sweet treat for sophisticated individuals.
Ibis
The Ibis is one of the trio of sweet wines, named for one of our co-owners, Dr. Shereef Hilmy. Dr. Hilmy is originally from Egypt. The Egyptian god Thoth is the patron of knowledge, his sacred bird being an Ibis. As a renowned cardiologist, its not a stretch to associate Dr. Hilmy with the Egyptian bird of knowledge. The Ibis is a classic and refreshing sweet white, perfect to enjoy with a good book. Won Silver Medals at the 2026 San Antonio, Fort Worth, Austin and Houston Rodeo Wine Competitions!
Skovrose
One of our co-owners, Marianne Hilmy, originally hails from the beautiful country of Denmark. The skovrose is one of a trio representing the Hilmy family and their journey. Skovrose (pronounced skoh-voh-suh) means wild or forest rose in Danish. This rose is light in color and full of flavor. Reminiscent of a wild honeysuckle on a relaxing spring walk through nature. Won a Silver medal at the 2026 Houston Rodeo Int'l Wine Competition and the Texas International Wine Competition, and Silver, Texas Reserve Class Champion at the 2026 San Antonio Rodeo Wine Competition!
Finch
The Finch is the third of the sweet trio representing the Hilmy family. The Finch is named for the finch birds in Texas, easily spotted at Hilmy Cellars. The finch is known for its adaptations through evolution. The Hilmy family has made their home in Texas and has adapted to become a true Texas family at heart. Completing the trio the Ibis and Danish rose found each other and have made their nest together in the Texas Hill Country. Won Gold; Texas Class Champion at the 2026 San Antonio Rodeo Wine Competition and Silver medals at both Houston, Austin and Fort Worth Rodeo Wine Competitions!
